Step right up into a slice of Southern heaven at the Barbosa's Barbeque (Denver, CO) booth, from acclaimed Texan pitmaster Alejandro Barbosa, where the smell of freshly smoked meats dances with the sounds of the blues. Barbosa's doesn't just serve great BBQ; it's a celebration of flavor, speedy service, & Southern hospitality, all served with a side of good times. Every year, festival goers tell us they've been waiting to eat Barbosa's Barbeque since last year's fest!

My vibe is to serve the highest quality chef driven Greek food as quickly as I can so all people are happy and well fed. And have a great time doing it with my fun staff.

Greek Salad: Fresh ripe slices of tomato, green pepper, cucumber and onions served on a bed of crisp romaine lettuce, drizzled with our homemade olive oil and red wine vinegar Greek dressing, feta cheese, and calamata olives accompanied with a warm pita bread.

Gyro: An exotic blend of beef and lamb or grilled breast of chicken with fresh herbs and spices, served on toasted pita bread with diced tomatoes, onions and lettuce. We then top it off with a generous dollop of tzatziki sauce.

Veggie Gyro: A Greek salad on pita bread topped with our creamy tzatziki sauce.

Dolmas: Imported tender grape leaves stuffed with rice, onions, parsley, dill, lemon juice and spices.

We specialize in dishes that originate from New Zealand! Hokey Pokey Ice-Cream! Although this food is a little naughty ~ for an occasional treat it warms the soul.

Marchio’s Grill

We are an Italian/American food trailer, offering homemade options for everyone including kids, vegetarians, vegans, and gluten-free customers.

Chicken Parmesan: Breaded/seasoned chicken breast topped with provolone and Marchio's marinara, served on a Rotella's ciabatta bun. Customers are often heard singing "Chicken parm, you taste so good ..."

Cheesesteak Sandwich: Grilled with secret sauce. We don't call it a "Philly" for good reason, but we have had MANY customers tell us, "I am from Philly, and this is the best cheesesteak I've ever had."

Toasted Ravioli: Also called "St. Louis Raviolis." These are a four-cheese blend ravioli, hand-breaded, and served with a side of Marchio's marinara.

Zoodle Bowl: Hand-spun zoodles, grilled with olive oil and topped with your choice of grilled chicken, Italian sausage, or homemade meatballs, Marchio's marinara, and parmesan cheese (gluten free).

Spaghetti and Meatballs: Sauce and meatball recipes originate from Grandpa Louis' recipes in Sicily. Marinara sauce is cooked for 12 hours; all-beef meatballs are made with love.

Sausage and Pepper Sandwich: An Italian/East Coast classic. Locally sourced Italian sausage, topped with slow-cooked peppers, onions and tomatoes, served on a Rotella's hoagie.

UMAMI... the fifth taste.  When you know it's not sweet, salty, sour or bitter, and you can't quite put your fork on that mouth-watering taste you're sensing... that's Umami

Our food is inspired by our founder's travels abroad and the universal drive to eat and share good food everyday.  Everything is made in house from scratch with love

Edamame: Seared edamame grilled with soy sauce and sesame oil garnished with toasted sesame seeds and coarse sea salt.  Tamari available in lieu of soy sauce as a gluten-free option.

Ninja Bowl: Seasoned rice or topped with fresh sautéed veggies, your choice of ginger pulled chicken, sweet chili ground pork or seasoned tofu, and choice of sauce (spicy peanut, spicy curry, soy ginger or teriyaki), garnished with fresh cilantro and toasted sesame seeds.

Umami Tacos: Sweet chili ground pork, ginger pulled chicken or seasoned tofu on three flour tortillas topped with tangy Asian slaw, sriracha raita, fresh cilantro and toasted sesame seeds.  Corn Tortillas available upon request.

Seared Dumplings: 6 pork dumplings seared on the griddle, served on a bed of rice with choice of sauce (spicy peanut, spicy curry, soy ginger or teriyaki), garnished with toasted sesame seeds.  Add fresh sauteed veggies.

Thai Nachos: Locally-made tortilla chips smothered with Umami peanut sauce, topped with choice of ginger pulled chicken, sweet chili ground pork or seasoned tofu. Garnished with onions, cilantro, Sriracha raita, & sesame seeds. 

Bahn Mi Sandwich: A chili infused baguette filled with choice of ginger pulled chicken, sweet chili ground pork or seasoned tofu. Topped with spicy peanut sauce, sriracha raita, pickled veggies, cilantro and sesame seeds 


We serve house made mashed potato tots that are double baked in house and fried on site. The tots are smothered in a variety of delicious toppings that we make from scratch with locally sourced ingredients in Flagstaff.

We offer options for all taste buds, ages, and dietary preferences including gluten free, vegan, and vegetarian items. The team we work with are all friends that we have grown up with and still with us since the day we started which I feel says a lot. We bring a lot of smiles, laughter, and hard work to every event we do and only allow nothing but good vibes into our team. Our food is amazing, our team is even better.
