Chef Bud Thomas - Festival “Show Cooking”

Bud was the first member of his family born in the United States. His early childhood was shaped by the culture and food that each of his parents brought to the table from their home countries. It was from his parents that he picked up his passion to cook at an early age. He honed his skills while working as a chef in top restaurants in the US and abroad such as Loews Ventana Canyon Resort and Café Terra Cotta in Tucson, AZ, Les Saveurs and The Collection in London, England. Chef Bud is a graduate of the New England Culinary Institute in Montpelier, VT, where he received a Bachelor’s degree from the prestigious Food & Beverage Management Program. We are excited to feature Chef Bud’s show cooking prowess as he brings exciting, enticing and honest food to the festival prepared with care and served with flair.

“Chef Bud, who is hailed as one of the Best Chefs in America, has introduced a menu of delicious summer dishes. His passion for local ingredients foraged from area farmer’s markets and ranches, farms and fisheries across southwest Colorado puts the taste of the Rockies right on the plate.”

lanson.png

Lanson Rose Champagne Le Rose

As one of the first rosé Champagnes, Le Rosé benefits from more than 60 years rosé-making experience of Lanson in its elaboration. It is sought-after for its pale salmon color and characteristic freshness reminiscent of the Black Label.

The delicate and fruity style of Le Rosé is a result of the unique savoir-faire based on:

  • The original Champagne vinification method for incomparable fruitiness and freshness.

  • A palette of reserve wines counting numerous vintages spread over 20 years.

  • The subtle addition of 7% of red wines Pinot Noir from Bouzy, les Riceys and Pinot Meunier from the Marne Valley.

  • A longer ageing time in cellar.

Telluride Blues & Brews Festival | Gaja Ca'Marcanda 2016

Gaja Ca’Marcanda 2016

This wine derives its name from Ca’Marcanda, the winery. Ca’Marcanda is the Piedmontese term for “house of endless negotiations” and refers to the many hours that Angelo Gaja spent convincing the property’s previous owners to sell the estate to him. Ca’marcanda is sourced from one of the stoniest sites of the entire estate, based in Castagneto Carducci in the World famous Bolgheri region on the west coast of Tuscany. The vineyards selected for this bottling are at the base of the hills, composed of 100% terre bianche (white soils), primarily limestone and calcareous ancient sea floor fossils. These soils are ideal for producing rich, structured long-lived red wines. The wine will have a very long life ahead, easily 15 to 20 years, probably longer if cellared properly.

2016 is a vintage with great concentration of fruit, structure and acidity.

Gaja CA’MARCANDA Vistamare 2019.png

Gaja Ca’Marcanda Vistamare 2019

Intense floral notes of acacia and linden flowers. The refreshing presence of Fiano gives notes of fern, musk and menthol. On the palate, it is fresh and compact with notes of bergamot, pear, nectarine and white currant. Then it shifts toward a more mineral and spicy character, with notes of flint, rosemary, saffron. The wine gets riper in the finish with hints of mango, almond and fig leaves.

Immortal.png

Immortal Estate Slope Cabernet Sauvignon 2015

Layers of black fruit, cherry, dried cranberries, spicecake, interwoven with sweet pipe tobacco, dark muscovado sugar, cocoa powder, raspberry leaf and hibiscus tea. Concentrated and intense, this mountainside Cabernet entices with its sweet fruit, supple palate and rich complexity. Accessible in its youth, it will continue to evolve for decades.

The Immortal Estate vineyard lies within an enclosed valley on steep mountainside slopes with mostly eastern and southern exposures at elevations ranging from l l 00 to 1700 feet. The soils are a complex mixture of uplifted alluvium and decomposed volcanic material typical of the Mayacamas Range and vary throughout the vineyard, which is on steep, mostly terraced slopes. The lean soils and steep slopes naturally limit vine vigor and give remarkably small-berried fruit. Although the vineyard is usually above the fog and sees warm days, the site is protected from inland heat and receives ocean cooling from early morning and late afternoon breezes that maintain our moderate growing temperatures somewhat cooler than Spring Mountain directly to the east. The extended growing day at moderate temperatures gives the fruit well developed tannins and rich texture yet preserves the complex fruit characters and natural acidity.

prosecco.png

Nino Franco Grave Di Stecca Brut Sparkling Wine Valdobiadenne 2010

A very pleasant dry taste at the beginning, followed by a growing silky fruit bouquet. The grapes are sourced exclusively from ancient origin vineyard, named "Grave di Stecca", a clos on the slopes of the Prealpi, just near the town center. The vineyard, exposed to the south and partly screened by a huge park, enjoys a particular micro-climate.

Nino Franco was founded in 1919 by Antonio Franco in Valdobbiadene. The winery is located at the foot of the Prealps, in the Venetian region and proud to be one of the oldest wineries in Valdobbiadene. Known for their Prosecco vine, the estate has been growing and evolving throughout four generations of producers. Antonio founded it, Nino expanded it, Primo improved international distribution and today, Silvia Franco is the future of the brand.

"The front label on the wine symbolizes not only the heart of the winery but the heart that quickly pounds when one does something passionately." - Owner, Primo Franco

brunello.png

Gaja Brunello Pieve Santa Restituta 2015

With the 2005 vintage, for the first time in history, the GAJA family decided to produce a classic Brunello without single vineyard designation, blended from all 40 acres the family has planted throughout the entire region. Pieve Santa Restituta's Brunello di Montalcino is now produced from a selection of estate-grown grapes from throughout the winery’s four non-contiguous vineyards as well as 25 acres of southwest facing vineyards in Torrenieri, in northeastern Montalcino, acquired in 2006.

Select vintage, with ageing potential better than 2010. Juiciness and concentration are the features of the 2015 vintage which shows elegance and drinkability. The 2015 Brunello has a very clear expression of sweet and ripe fruit, opening on the palate, with notes of spice and earthy aromatic herbs. This wine has remarkable texture, mouth-filling fruit and a very good length.

Deep garnet color is complimented by charming notes of juniper berries, licorice and sweet wood that greet the nose.
